Dylan was diagnosed with her third case of strep throat last week. Somehow, despite the fact that she is super cuddly and often sleeps with us (I know, lay off), I managed to avoid it the first two times. This time I wasn't so lucky!
My sore throat hit with a vengeance last night, but the penicillin has been called in, and I am sure I'll be my sprightly self (ha) soon enough. That said, since I'm still feeling icky, it seemed like a good night to pull out my mom's Italian Vegetable Soup. I'll also heat up some garlic bread (I keep a few loaves of Alexia garlic bread in the freezer at all times - it's really good, and sold in bulk at Costco).
Here's the menu for the rest of this week:
Tuesday: steaks on the grill (pretending the weather is spring-like), baked potatoes, Greek salad
Wednesday: we have a work event - not sure what the kids will have!
Thursday: Michael's chicken picata, quinoa, haricot verts
Friday: Chinese take-out, our new Friday night tradition
Saturday: date night!
What are you guys cooking this week? Anyone else ready for spring veggies to hit with a vengeance?

Danielle, that soup looks amazing! I've been doing this low/slow carb diet thing (which, BTW, has been incredible), and minus the pasta, it's exactly the sort of thing I've been looking for! I'm going to make a batch this week, for sure.
