Now that Twitter has completely invaded our lives, I've found that Michael and I share a lot of information with each other that way. And so, it came to pass that on Friday, I got this Twitter (as did about 60 other people). This adds some complication to our weekday menus, but we did this once before (probably a good five years ago), and it was kind of fun.
So, this week's menu will hopefully look something like this:
Monday: Baked Eggplant with Feta, Yogurt Dill Sauce , Brown Rice, Asparagus
Tuesday: Chilaquiles Casserole (Max's birthday!)
Wednesday: Moroccan Tempeh with Fresh Green Beans
Thursday, the kids and I head to NY for my Grandma Ana's 95th Birthday party.
Could you share a recipe for the birthday Chilaquiles Casserole please? If this is a birthday treat for him it must be a kid friendly meal!

I'm looking forward to lots of suggestions of great vegetarian dishes. Jason comes from a meat-and-potatoes family, and while he says he's fine with vegetarian meals, he often scours the fridge an hour later looking for something "substantial."

I like to eat Vegetarian at least 1x a week( maybe 2). I get Veg Times magazine. Its pretty basic, but the subscription is about 4 bucks for the year.
