This is a fun (and healthy) summer dessert that goes with many types of cuisine. At our Kroger this past week, pineapple was on sale for just $2 each, so I stocked up. Try this one evening - I promise you'll love it!!
Grilled Pineapple
1 pineapple, cut into rings or wedges (wedges are easier to grill)
2 tablespoons brown sugar (or to taste)
Grill the pineapple directly over the heat for 3-4 minutes per side. Place in a bowl and sprinkle with brown sugar.
(If you really want to gild the lily, a pat of butter would make this taste even more luscious, but do it immediately, so the heat of the pineapple is strong enough to provide melting power.)
That sounds so good! I bet my kids would love grilled pineapple.

Hey Danielle! Nigella Lawson has a variation on this that is absolutely delicious. She dips the grilled pineapple in a chocolate sauce made with Malibu rum. If I can find the recipe I will send it your way.

I have that Nigella Lawson recipe and the first time I tried it we ran out and the kids begged me to go get another pineapple. It's delish.
