Spaghetti & Meatballs

This is the first of what I hope will be many pantry meals. We will be moving in just over two months, and I have two giant cabinets plus two freezers' worth of food to cook.

I'm going to try to cut back on the amount of food I buy each week in an effort to use some of my surplus up prior to the move. I have no intention of packing boxes of canned goods, and I certainly won't be bringing ziplocs with frozen meats. I will, of course, still go shopping every week to stock up on staples such as milk, coffee, fruit, salad fixings, etc., but no more pantry foods!

Tonight was Spaghetti & Meatballs. I had  a giant bag of Sofo's meatballs in the freezer, so I cooked those up in some leftover Barilla sauce to which I added some fresh garlic that I sauteed up in a healthy splash of olive oil. I cooked an entire pound of spaghetti, because I never use up the half boxes that I leave over and put back into the pantry. (Any suggestions for leftover spaghetti with no sauce on it are welcomed. I'm thinking some sort of spaghetti pie?)

I also baked a miniature loaf of La Brea bakery Chopped Garlic bread. It was really good, especially dipped in olive oil. I like that the local Kroger carries this. It's not the best bread in the whole world, but it's certainly tasty, and it goes well with a meal like this!

Max ate what we did. I pureed some spaghetti with sauce and meatballs in my miniature food processor. He was somewhat shocked after his first bite, but he got used to it quickly, and seemed pleased to finally have some flavor in his diet.
