Ultimate Comfort Food - Cottage Cheese & Noodles
This was one of my favorite dinners growing up, and now it's a favorite of Dylan's, as well.
Cottage cheese and noodles is a very Jewish meal. It's loosely based on Noodle Kugel (which I'll be making for Bunco this week), but is more freeform, and much easier to make.
With a kugel, noodles and cheese are baked together with additional ingredients (anything from sour cream to onions - some also add cinnamon and sugar for a sweet kugel). Here, just the basics are pulled together in a bowl for an easy, yet delicious snack.
I prefer this dish made with egg noodles, but tonight we made it with elbows, which is the way my mom always made it. The secret is adding a ton of freshly ground black pepper.
Whenever I'm feeling down or under the weather, or just a touch of nostalgia, I make this dinner. Tonight I was down (Friday nights are hard for me) AND under the weather (sinus infection), so it was an ideal meal.
